Spring pack thickness really isn't too important when picking out replacement leaf springs. What is most important is the length of the springs and the axle capacity. We did some research on your trailer and it looks like you have 6,000 lb axles which we have a few options. We have the part # e34SR which is 25-1/4 inch long, part # e94SR which is 26 inches long, and # e78SR which is 25-1/4 inch long. You are measuring correctly for the spring seats and you definitely want to replace that axle as the spindle is toast. You will also want to measure for the hub face to hub face measurements. If you have 89 inch hub to hub, you can use the Dexter Trailer Axle Beam with E-Z Lube Spindles - 89" Long - 6,000 lbs # 8327830 but you will need to have the spring seat # TRSS300 welded in the correct locations. To find the correct replacement leaf springs for your 2007 Weekend Warrior 2600FB you will need your axle capacity as well as the length of your current leaf springs. In order to pick out a direct replacement for the landing gear on your RV we would need to know the distance between the mounting brackets. Otherwise you could just have the brackets removed from your trailer by a qualified welder and then install the brackets that come with the Reese Bulldog Tandem Landing Gear Set # RP500708. Either way this landing gear set would work well for you, you just might have to have the brackets of your trailer removed and then install the brackets.

The B&W Biker Bar Motorcycle Tie-Down Systems like the part # BWMC2304 that you referenced are designed for a permanent install. The kits bolt to the floor of the trailer and I would not consider it an easy removal. It's not difficult by any means but when they designed this kit they didn't have what you were wanting to do in mind.
